A note about flour:<\/p>

Mandatory Fortification Requirement<\/u><\/strong><\/p>

The UK government now requires that all non\u2011wholemeal wheat flour must be fortified with 250 micrograms of folic acid per 100g of flour to support public health. All flour producers must comply no later than the 13th of December 2026 and many are already doing so, especially the supermarkets.<\/p>

I\u2019m very bothered by this and have taken the decision to source a totally additive free white flour from a small independent miller whose output is less than 500 tonnes per year, so he can avoid this regulation. As a result of this, some of my cakes \u2013 such as Lemon Drizzles \u2013 will look a bit darker than they used to. This is as a result of there being no calcium carbonate (or chalk!) in the flour. They will still taste just as good though!<\/p>

Sometimes it’s just easier to have a platter full of little individual cakes …. no trying to slice up a larger cake into equal portions.\u00a0 All the little cakes I offer are baked in batches, usually 12 or 18.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Mini Passion Cakes<\/strong><\/p>

A well-loved classic with a lovely texture provided by the inclusion of chopped walnuts and carrots which lend a delicious natural sweetness. No diminishing of passion, just perfectly formed little cakelets, each one slathered with a topping of slightly tangy cream cheese frosting and finished with a dusting of walntus.\u00a0 These cakes should be kept in the fridge to keep the icing fresh.<\/p>
