A note about flour:
Mandatory Fortification Requirement
The UK government now requires that all non‑wholemeal wheat flour must be fortified with 250 micrograms of folic acid per 100g of flour to support public health. All flour producers must comply no later than the 13th of December 2026 and many are already doing so, especially the supermarkets.
I’m very bothered by this and have taken the decision to source a totally additive free white flour from a small independent miller whose output is less than 500 tonnes per year, so he can avoid this regulation. As a result of this, some of my cakes – such as Lemon Drizzles – will look a bit darker than they used to. This is as a result of there being no calcium carbonate (or chalk!) in the flour. They will still taste just as good though!

Sometimes it’s just easier to have a platter full of little individual cakes …. no trying to slice up a larger cake into equal portions. All the little cakes I offer are baked in batches, usually 12 or 18.

Mini Passion Cakes
A well-loved classic with a lovely texture provided by the inclusion of chopped walnuts and carrots which lend a delicious natural sweetness. No diminishing of passion, just perfectly formed little cakelets, each one slathered with a topping of slightly tangy cream cheese frosting and finished with a dusting of walntus. These cakes should be kept in the fridge to keep the icing fresh.

Lemony Butterfly Cakes
Delicate little sponge cakes filled with lemon butter cream and finished off with butterfly wings. A bit retro but they were definitely a childhood favourite of mine!

Mouthfuls of dark, sticky ginger sponge filled with lemon curd and mascarpone with stem ginger and all topped off with a lemon drizzle. Irresistible!

Apricot & Thyme Friands GF
Mediterranean mouthfuls! Almonds, polenta, apricots, a hint of lemon and a smattering of home-grown thyme transport you to warm summer climes at any time of the year (thyme permitting!). I recommend you keep these in the fridge to keep the fruit fresh, but bring them out in good time to come to room temperature.

Mini American Chocolate Cakes EF (can be DF)
Just like their large parent, these baby chocolate cakes are super moist, sandwiched together and topped with the darkest chocolate frosting. The image features chocolate coated coffee beans on top, but the cakes are now offered with grated 70% dark chocolate.
